Chipotle-Black Bean Chili
 
 
1 tsp   olive oil

1 cup   onion, finely chopped
6 cloves   garlic, minced
2 tbs   chili powder
1 tsp   canned Chipotle chili
1/4 tsp   pepper
1/8 tsp   salt
1 30 oz can   black beans, cooked, water drained
1 28 oz can   whole tomatoes
4 1/2 oz   green chiles, drained
1 tsp   fresh cilantro
 
Heat oil in a large saucepan over medium-high heat. Add onion and garlic; sauté 3 minutes or until tender. Add chili powder and next 6 ingredients (chili powder through green chiles); bring to a boil. Reduce heat, and simmer 15 minutes.
