asparagus, cooked, chopped |

freshly grated parmesan cheese |

| Place a large non-stick pan over moderate heat with one teaspoon olive oil; saute onions, red peppers, garlic, and red beans until vegetables are soft (about 10 minutes). |
| In medium bowl, combine eggs and asparagus; set aside. |
| Add remaining olive oil into vegetable skillet and pour the egg mixture into pan. Reduce heat to medium-low and cook for 10 to 15 minutes, or until mixture is set on bottom and lightly browned. Add salt and pepper as needed. |
| Preheat oven to 350 degrees. |
| Sprinkle Parmesan cheese over top of mixture and broil for an additional 3 to 4 minutes or until cheese is lightly browned. Serve. |
