romain lettuce, torn |

cucumbers, sliced, seeded |

olive oil |

| |
| Bring water to boil in a medium saucepan and cook potatoes until tender on medium to high heat, about 10 minutes. Drain and pour potatoes back into pan. |
| Prepare dressing by whisking together vinegar, salt, pepper and oil. |
| Combine potatoes and white beans with dressing and add 1/2 teaspoon crushed rosemary. Set aside. |
| In a separate sauté pan, heat olive oil over medium heat. Add salmon fillets and sprinkle lemon juice and remaining 1/2 teaspoon crushed rosemary. Cook about 3 - 4 minutes on each side or until fish flakes easily. Remove skin from fish. |
| Place lettuce and cucumber slices on a serving platter. Top with potato mix and fish fillets. |
