 Mango Black Bean Salad
 
 
2 cans   black beans  
4 medium   mangoes, peeled and diced  
1 cup   parsley or cilantro, minced  
1 cup   scallions, chopped  
2 medium   red peppers, seeded and diced  
2 tbs   olive oil  
1/2 cup   balsamic or wine vinegar  
 
Drain beans of their water and combine with mangoes, parsley, scallions, and red bell peppers.
In a separate bowl, whisk the oil and vinegar together.
Pour over vegetables and mix well. Add salt and pepper to taste. Serve.
