 Summer Spaghetti
 
 
1/4 cup   olive oil  
1   shallot, minced  
2 cloves   garlic, minced  
2 medium   russet or golden potatoes, peeled, diced  
1 medium   zucchini, ends trimmed, chopped  
1/2 lb   green beans, ends cut  
1/4 cup   fresh basil, coarsely chopped  
1/2 medium   lemon, juiced  
1 lb   whole wheat spaghetti  
2 tbs   unsalted butter, room temperature  
1 tbs   parmesan cheese, freshly grated lemon peel  
 
Heat a large skillet over moderate heat for 5 - 7 minutes. Sauté the shallot and garlic with olive oil, stirring frequently. Add the potatoes until tender (about 7 minutes). Add the zucchini, green beans, and basil. Continue sautéing, stirring occasionally, until all the vegetables tender. Season to taste with salt, pepper and lemon juice.
While the vegetables are cooking, cook pasta according to package directions. Drain well.
Immediately place the sautéed vegetables with all their juices in a large shallow pasta bowl. Add the linguine and butter, toss to mix well and serve immediately. Add parmesan at the table.
