| |
| Rinse rice several times under cold water. Place rice in a large saucepan with four cups of water and bring to a boil. Reduce heat and cook covered until tender (about 15 - 20 minutes). |
| In a saucepan over moderate heat, cook chopped onion and garlic, stirring frequently. Slowly add the flour while stirring and continue to cook for three minutes. |
| Stir in the tomato puree and chopped tomatoes. Add beans and vegetable stock. Cover and cook for 12 minutes, stirring occasionally. |
| Serve the beans with rice and garnish with fresh chopped parsley. Add Salt & pepper to taste. |
