 Beef and Eggplant Casserole
 
 
1 lb   ground beef, lean  
1 medium   onion, chopped  
4 cloves   garlic, chopped  
1 tsp   Italian seasoning, crushed  
1 medium   eggplant, diced, peeled and seeded  
1 cup   Italian breadcrumbs  
1 tsp   salt  
1 tsp   pepper  
1 cup   cheddar cheese, grated  
 
Preheat oven to 350 degrees.
In a skillet brown ground beef. Add chopped onion, garlic, and Italian seasonings. Cook 5-7 minutes.
Cook peeled, diced eggplant in water until tender; drain.
In a baking dish, combine the ground beef, the cooked eggplant, bread crumb, salt and pepper. Top with grated cheddar cheese and bake for 15 minutes.
